BUTT & BEANS
The only way to compete with an overdose of Rebel Yell: Butt & Beans.
Seek out a pork butt with decent marbling. If you find something with a thick white bottom layer of fat, don't balk. That's your huckleberry.
You'll need to experiment with a rub. Usually it's best to work from foundational flavors: black and white pepper to front-of-the-tongue heat: paprika, cayenne, etc. I like a cumin heavy rub, with celery seed, mexican oregano, paprika (hot and sweet varieties), black pepper, some cayenne and sea-salt.
Coat the butt in the rub and let it sulk.
Warm your dutch oven with canola oil and brown the butt slowly on all sides. Throw in a quartered onion. Some dried peppers. Nestle the butt in the pot. Cider vinegar, beer, some molasses. Bring the liquid half-way up the meat and watch it come to a heavy boil. Then into a medium over for four hours.
Time for some of that Rebel Yell.
Beans. Rewind 24 hrs. You've soaked navys, pintos, pinks. Boil them soft then mix with colman's mustard, molasses, lea & perrins, and a good glug or three of bourbon. Cover with thick slices of applewood smoked bacon. Pop into that oven and let them heat slowly over an hour. Perfection.
Thick white bread. Some coleslaw - heavy on the vinegar and spiked with celery seed. Butt. Beans. Bliss.
